Kale Pesto (nut free, dairy free)
- 3 packed cups of curly kale
- 3 packed cups of basil
- 1/4 cup (loosely packed) of mint
- 1/4 cup cooked peas
- 1/3 avocado
- 1/2 cup olive oil
- 1 lemon, juiced
- Zest of 1 lemon
- 4 cloves of garlic
- 1 tsp salt
- 1/2 tsp pepper
- Combine everything into a high-powered blender and blend until smooth and creamy
- Serve on top of pasta or zoodles, as a dip or with chicken!
