Paleo Shortbread

Paleo Shortbread

2 ¼ cups almond flour

¼ cup arrowroot powder

¼ tsp sea salt

2 - 3 tbsp maple syrup

Half a cup of butter

 

Preheat oven to 350 and line baking sheet

 

In a stand mixer, combine almond flour, arrowroot powder, and sea salt

 

Add the maple syrup and mix until combined

 

Drop the butter into the mixing bowl 1 tablespoon at a time for easier incorporation. Use slow/medium speed.

 

Mix until a ball forms.

 

Place a bowl of dough in between two pieces of parchment paper and use a rolling pin to roll into about 1/2 inch thick

 

Cut into bricks or use biscuit cutters. Use a toothpick to poke dots in the top like in store-bought traditional shortbread (I forgot for the picture on this recipe!)

Bake for 12-15 minutes until lightly golden brown
