Christmas Spiced Apple Pie

Pie filling:

  • 10-12 large green apples, peeled and cut into chunks (if you want a little bit of crunch and texture, keep them bigger)
  • 2 tbsp cinnamon
  • 1 tsp ground coriander
  • 1 tsp ginger
  • ½ tsp clove
  • ½ tsp nutmeg
  • 1 tsp vanilla
  • 2 tbsp lemon juice
  • 3 tbsp maple syrup

 Note: if you don't like a super spiced apple pie, go lighter on the spices 

Pastry:

  • 2 cup almond flour
  • 2 Tbsp coconut flour
  • 1 ¾ cup arrowroot flour
  • 1 tsp salt
  • 2 Tbsp maple sugar (or omit for no sugar)
  • 14 Tbsp grass fed butter
  • 2 eggs

 

This will make enough pastry for you to have pastry on the bottom and top of the apple pie. If you’d prefer to not have pastry on the bottom of your apple pie, then you’ll have some leftover that you can cut into shapes and bake as shortbread.

 

  1. Use a large electric mixer or food processor and mix all the pastry ingredients except the eggs. Once a dough like consistency forms, then add the eggs and mix until dough forms. Wrap the dough in beeswax wrap (sprinkle some arrowroot flour on it to avoid sticking and place in the fridge whilst you make the rest
  2. To make the filling, heat some coconut oil or butter in a large fry pan over medium heat and then add the apples and cover until starting to soften
  3. Add the spices, lemon juice, vanilla and maple syrup and cook until apples are soft (if you want them crunchy, then monitor so you don’t overcook)
  4. Preheat the oven to 350F
  5. Either split the dough into two and roll the pastry out for the base of the pie using a rolling pin. Or fill the pie dish with the filling and then roll the pastry out between two pieces of parchment paper and gently place on top of the pie filling and cut the edges off.
  6. You can make gingerbread or snowflake cut outs with the rest and place on top of the apple pie for some extra pastry (and cuteness)
  7. Cook for 15-20 mins or until golden
  8. Serve with vanilla ice cream, fresh cream or just as it is!
