Gluten-Free Chocolate Chip Cookies (with Collagen)

These chocolate chip cookies are a tried-and-true recipe of mine from when I used to be a recipe developer and food photographer. I’ve been making (and loving!) them for several years now, and my clients are obsessed now too. You can make them with or without the collagen powder, but the health benefits you’ll get from the added collagen are SO good. Can't wait to hear what you think!! 😋
INGREDIENTS

2 cups almond flour

1/4 cup arrowroot starch

1 teaspoon baking powder

1 teaspoon vanilla extract

4 tablespoons maple syrup

2 tablespoons coconut oil

1/4 cup cashew or coconut milk

1/2 cup chocolate chips of choice

Optional: 4 tablespoons collagen (might need to add in another tablespoon of coconut oil if you feel like the mix is now a bit dry)
METHOD

Preheat oven to 175C/350F

Combine your dry ingredients and mix well

In a microwave-safe bowl or in a saucepan over the stove, combine your coconut oil and syrup, and heat until melted. Whisk together until combined

Add the syrup/coconut oil mixture to the dry mixture, along with the vanilla extract and coconut milk, and mix very well

Fold in your chocolate chips

Bake for 12 minutes or until just golden (don’t overcook them!)
