To make the rice, cut the broccoli and cauliflower into florets and blitz in a food processor until rice sized bits form. Heat the coconut oil in a medium fry pan and add the rice and turmeric stir to combine. Cook for 5 minutes or so until just soft. Once cooked, transfer to a bowl and set aside.
To make the egg mix, add everything into a mini food processor or small blender and blend until all the spinach and parsley is well chopped and the mix is green and frothy. Heat the coconut oil in the same frypan you cooked your rice in. Once the pan is hot (so you can feel the heat radiating off the pan by hovering your hand above it), pour the egg mix on to the pan and turn the heat to medium. Place a lid over. Cook for 3-5 minutes. Add the rice onto ONE SIDE of the omelette and flip the other side over the rice.
Carefully slide it onto a plate and serve with avocado sprinkled with some black sesame seeds and sauerkraut
