Coconut Ice Blocks

These babies are so perfect for hot summer days, in the pool or chilling in the sun. Not only will they cool you down, but they are good for your gut and full of all the good fats to fill you up- without the sugar! Regular icy poles will just leave you wanting more (hello your sugar addiction), but these ones will have you perfectly satisfied (and you know what, if you want another one – there’s no shame!)
  • 1/2 cup chopped nuts
  • 2/3 coconut milk
  • 4 tsp raw cacao
  • 1/4 cup chopped almonds
 
  • 1/2 cup strongly brewed coffee (cooled)

  • 1/2 cup water
  • 4 TB cacao nibs

Just choose the mix you want, whisk the mix, set them in ice-block moulds and BAM! Coyo yoghurt and granola: 1 1/2 cup Coyo coconut yoghurt (natural), 1/2 cup chopped nuts, seeds and coconut flakes with 1 TB cinnamon. Combine the granola in a small bowl and place at the bottom of the mould. Then fill with Yoghurt, pushing it down well so that the yoghurt gets through the gaps of the granola to help it hold. Almond and chocolate: 2/3 coconut milk, 4 tsp raw cacao, 1/4 cup chopped almonds. Coffee: 1/2 cup strongly brewed coffee (cooled), 1 cup coconut milk. Choc-Peppermint: 2/3 cup coconut milk, 1/2 cup water, 4 TB cacao nibs, 3-4 drops food grade peppermint essential oil. Blueberry and Coconut: 2/3 cup coconut milk, 1/2 cup water, 1/2 cup blueberries (roll in dessicated coconut to serve). Vanilla bean: 2/3 cup coconut milk, 1/2 cup water, 1/2 tsp organic vanilla bean powder.
