Chocolate and Pecan Christmas Cookies
How cute are these cookies! They remind me so much of a white Christmas, which is my favourite Christmas ever. I grew up having white Christmas’s so when I’m home in Australia, it just doesn’t feel the same for me! I need the snow!   • 1/4 cup rice malt syrup
  • 2 eggs
  • 1/4 cup coconut oil, melted
  • 1/3 cup Almond, Cacao and Coconut butter from Mayvers (if you don’t have this, just use 1/3 cup almond butter + 1 Tbsp raw cacao powder)
  • 1/5 tsp vanilla extract
  • 1 cup coconut flour
  • pinch of salt
  • 1 tsp baking soda
  • Activated pecans for serving
  • desiccated coconut for serving
  • Rice malt syrup for serving (optional)
  1. Preheat the oven to 170c and line a baking tray
  2. In a food processor place all the wet ingredients until combined and then add in the dry ingredients and process until it forms a dough.
  3. Roll into small balls and place on the baking tray. Press them down slightly and then add a pecan to the middle of each of the cookies.
  4. Bake for 10-12 minutes. Remove from the oven and sprinkle with some desiccated coconut and drizzle with rice malt syrup (optional).
