A super easy, light and nourishing lunch or dinner that supports your body in many ways. I always like to have a fresh batch of bone broth simmering away for each week as it is so healing for your gut and seriously makes your skin GLOW! I also like to have a batch of my meatballs in the freezer so they are ready to go for lunches like this!
5 small cooked Meatballs (I keep mine in the freezer so they are on hand for whenever I need them), recipes here, here and here
1 zucchini, thinly sliced
5-6 tuscan kale leaves
1/2 bunch of broccolini
3 Tbsp olive oil or grass fed butter/ghee to serve
Bring the broth to a gentle simmer in a sauce pot and add the zucchini, broccolini, kale and meatballs and let simmer for 10 minutes.
Add the olive oil or butter and serve! P.s. if your broth doesn’t already have salt it (my recipe asks you to put in the salt when you go to serve it) in then add a good pinch of salt. If you have already added salt to your batch, then you probably don’t need anymore.
