Sweet Potato Chips with Garlic-y Tahini Sauce
- 1 sweet potato
- 2 tbsp coconut oil
- Salt and Pepper
- 1/2 cup tahini
- 1 lemon, juiced
- 2 garlic cloves, crushed
- 1/2 cup boiling water (adding more if you want it thinner)
- Preheat the oven to 200c and line a baking tray
- Cut the sweet potato into wedges and lay out on one of the trays. Drizzle or spray with 2 tbsp of coconut oil and season with salt and pepper
- Bake for 30-40 minutes or until golden.
- Meanwhile, make the tahini sauce by adding everything into a jar and shake vigorously until well combined. You can add more boiling water if you want it thinner.
- Serve with the sauce on the side of the chips to dip them into!
