My favourite cuisine is definitely Mexican….I mean duh, GUAC!! I love the flavour of juicy lamb with guac, and adding some homemade tomato sauce, adds a ‘salsa’ like element.
1 Tbsp coconut oil
500g lamb mince
1 brown onion, diced
3 cloves garlic, crushed
1 Tbsp paprika
1/2 tsp cumin
2 Tbsp dried oregano
1/2 cup bone broth or stock
3 Tbsp homemade tomato sauce (optional, can omit or sub for 2 tbsp tomato paste)
1/2 tsp salt
4 spring onions, white part and some of the green part chopped
Guacamole:
2 avocados
2 small red onions, diced or 1 large, diced
1/2 cup fresh coriander, diced
1 lime, juiced
1 tsp salt
1/2 tsp pepper
Cos lettuce cups to serve
Coconut yoghurt or greek yoghurt to serve
500g greens, steamed
1/4 cup olive oil
Sauté the onion and garlic in coconut oil in a medium fry pan. Once translucent, add meat and brown. Break up meat pieces using a flat-ended wooden spoon. Add spices and broth and let simmer for 10-15 minutes. Add 3 tbsp my homemade tomato sauce and mix well.
Meanwhile, make the guacamole by mashing the avocado and then adding everything into a bowl and mix until well combined.
To serve, place some lamb in a lettuce cup, add guacamole and a dollop of yoghurt. Sprinkle with spring onions and devour!
Serve 500g steamed greens with 1/4 cup olive oil over them and salt and pepper to taste.
